It’s officially summer! As I finished up final exams yesterday, I was struck with a whole bunch of feelings. Classes occupied most of my time thus far in quarantine: getting up early for zoom lectures, scheduling team meetings, and mustering up the motivation to study for exams. While I’m happy to have finished strong, part of me wonders what I will do with all of this free time. I’m excited to dedicate lots of time and energy into this new project of mine!
Since it is now officially summertime, I thought it fitting to whip up one of my all time FAVORITE summer dishes. This quinoa “salad” is super easy, super delicious, and SUPER fresh. It is great for those of you on-the-go as you can make a big batch at the beginning of the week and eat if for easy and delicious lunches throughout the week!

Ingredients
1 cup quinoa
2 cups water
1/4 cup EVOO
2 tsp cumin
Lime juice
1 tsp salt
1/2 tsp red pepper flakes
1 and 1/2 cups Cherry tomatoes
1/4 cup Cilantro
1 can black beans
5 green onions
Directions
Combine the quinoa and water in a saucepan. Bring to a boil then turn down the heat to a summer, cover until all of the water is gone.
In a mixing bowl, whisk together the olive oil, cumin, lime juice, salt, and red pepper flakes.
Wash and slice the cherry tomatoes.
Strain and rinse black beans.
Combine cherry tomatoes, cilantro, black beans, and green onion in a large bowl.
Add the quinoa and dressing and mix.
