Happy Cinco de Mayo! I don’t know if it’s just being in quarantine, but I’ve never been so excited for a holiday! The thought of yummy homemade Mexican food, sunny weather (finally), and fresh margaritas has me SO excited! With everyone home and considering the fact that we have pretty much done the same thing every single night, I am set on making this evening a refreshing treat!
My vision: fajita vegetables, slow cooker pulled chicken, cauliflower “fiesta” rice, and MOST importantly, fresh margaritas. Who doesn’t love a good margarita? But, what most people don’t know (or choose to overlook) is the fact that most store-bought margarita mix has TONS of refined sugar and artificial flavors. Taking the extra 5 minutes to squeeze some fresh citrus is so worth it!
Add some oranges, lemons, and limes to your grocery list because we’re makin’ margaritas!
Ingredients
1 cup ice
4 tbsp fresh orange juice
2 tbsp fresh lemon juice
2 tbsp fresh lime juice
2 tbsp water
2 tsp agave nectar
4 oz tequila
3 tsp salt
1 sliced lime
Directions
1) Squeeze the orange, lemon, and limes into separate glasses.
2) Wet the rims of 2 rocks glasses with a wedge of fresh lime.
3) Dip the glasses into the salt to coat the rims.
4) Fill the glasses with ice cubes.
5) Add ice, fresh citrus juice, agave nectar, water, and tequila to cocktail shaker.
6) Shake and pour over ice.
