When in doubt, cooking simple is the way to go. With take-out options readily available right now, it can be tempting to surrender to the restaurant goodness and throw any hope of eating a healthy dinner out the window.
This isn’t to say you need to make some extravagant dinner every night, especially when you aren’t in the mood. One of my favorite easy and healthy dinner options is salmon. Salmon is super rich in Omega-3 fatty acids and is a great source of protein, making it a super healthy and delicious option!
There are so many ways to prepare it that are all (surprisingly) easy to make! You can go the classic olive oil, salt, and pepper route or you can follow this recipe to switch things up.
As if the delicious salmon wasn’t enough, this recipe features my FAVORITE roasted potatoes! The star ingredient here is fingerling potatoes. They’re small enough that when roasted, they get perfectly crispy on the outside and soft on the inside. Seriously, you’re gonna’ want to try these!
This meal is an oldie but a goodie. Save this recipe for the next time you want a nourishing dinner but aren’t feeling super inspired in the kitchen. Happy cooking!
Ingredients
2 wild-caught salmon fillets
Teriyaki coconut aminos
Salt
Pepper
1 head of broccoli, cut into florets
1 bunch fingerling potatoes
EVOO (extra virgin olive oil)
Garlic Salt
Paprika
Chili Powder
Directions
1) Place the salmon fillets in a glass baking dish (or something similar). Season with salt and pepper.
2) Pour enough teriyaki coconut aminos to cover the fillets. Let marinate for at least one hour.
3) Preheat oven to 400° F.
4) Cut fingerling potatoes in half and place into a large bowl. Season with EVOO, garlic salt, paprika, chili powder, and pepper.
5) Transfer potatoes to a parchment paper lined baking sheet. Let roast until golden brown (soft on the inside, a little crunchy on the outside). About 30 minutes.
6) Rinse and cut the broccoli into bitesize florets.
7) In a pot with a steamer attachment, bring an inch of water to a boil. Place broccoli florets into the steamer attachment and cover. Let steam until florets are tender to the bite. About 8 minutes.
8) Set oven to broil.
9) Place the salmon fillets on an aluminum foil lined broiler pan. Broil until golden brown and edges begin to burn.
