Hello there! I was a bit MIA this past week taking a much needed vacay to see some friends and pay a long overdue visit to the ocean. All I can say is that oh my goodness I feel refreshed and mentally reset! Before leaving I was feeling a bit “bleh” (we all know the feeling) and was having a hard time feeling motivated. When I woke up yesterday (my first night back), I felt so much better and knew that this week was going to be more productive.
With only a few weeks until I move back to North Carolina and into my first apartment (so excited!) I have lots of planning to do and tons to get done! I find that I am my most productive self when I get an early start to my day. I’ve always been a morning person and have the most energy right when I wake up (I know some of you night owls are rolling your eyes). If you’re like this too, try getting into a routine of going to bed earlier and getting stuff done in the morning!
An integral part of my morning routine is a nourishing breakfast. If I skip it, I end up tired and grumpy later on in the day. This summer I have been LOVING smoothies and smoothie bowls. I seriously think I consume at least one smoothie per day and am not planning on stopping anytime soon. I especially love to make a smoothie for breakfast because they are so refreshing and really wake me up!
Today I am sharing my favorite smoothie bowl recipe inspired by my favorite smoothie place here in Boulder. I love to stock up on frozen fruit because it never goes bad and is great for making super easy and delicious recipes. Add these ingredients to your grocery list so that you can make this incredibly refreshing and filling smoothie bowl for your next early morning!
Ingredients
1 frozen acai pouch (I get mine from Trader Joe’s)
¼ cup frozen blueberries
¼ cup frozen strawberries
¼ cup frozen cherries
1 cup milk (oat and almond milk are my favorites)
1 tbsp chia seeds, plus more for garnish
1 tsp flax seeds
½ cup granola
Honey or agave nectar
Handful of fresh blueberries
Directions
1) In a blender, combine the frozen acai, frozen blueberries, strawberries, cherries, milk, chia seeds, and flax seeds. Blend well until a smooth and thick texture is reached.
2) To serve, divide the acai smoothie between two bowls and top with granola, fresh blueberries, chia seeds, and honey or agave!
