You’d be shocked to find out what’s hiding in store-bought salad dressings. You’d be even more shocked to learn how easy it is to make one you love at home! I make a batch of this almost every single week! It’s so fresh and simple and goes with nearly every salad (I even toss it with roasted veggies).
This recipe is from my beautiful Aunt Tina who makes this dressing religiously. Every time I travel to Southern California, I look forward to having it at our family dinners!
I make my salad dressings in a reusable salad dressing maker (found here) but you can use a mason jar or Tupperware to shake it up and store.
Aunt Tina’s Salad Dressing
- 2 medium garlic cloves
- .5 tsp salt
- A few turns of freshly ground black pepper
- 1 tsp dijon mustard
- Juice of 1 lemon
- 1/2 cup EVOO
Tina’s Tip: You know that you have a good quality olive oil if, when u refrigerate, it solidifies!
Roasted Sweet Potato Salad
- Spring Mix
- Sun Dried Tomatoes
- Toasted Pine Nuts
- Avocado
- Roasted Sweet Potato
Roasted Sweet Potato:Preheat oven to 400 degrees, skin sweet potato, chop into 1/2” cubes, toss in EVOO, salt, pepper, and whatever seasoning you prefer (I like Trader Joe’s Green Goddess seasoning), roast for 45 minutes, or until golden.
